All core classes are viable for all content in the game. It can easily be argued some specs are better/more efficient than core for completing certain content and that's true. The Sylvari in Ghosts of Ascalon was a Necromancer. She doesn't understand the taboos of why using your dead allies as cannon fodder is a bad thing. It works beautifully. Asura on the other hand, are noted for their cleverness and inventions --- they don't come across as a race that would be fond of necromancers. Any class has at least good combinations in terms of race. Some classes like Sylvari don't actually entail any specific class being the best combo though, so I think Mesmer and Thief are definitely a stretch and moreso to fulfil the criteria of the categorisation than being lore-accurate. On champs, there is higher CC and AoEs in open world PvE, and raid builds are typically made to synergize with other group meta raid builds. If you're looking for something relaxed with an easier time in general open world PvE I'd recommend out of the 3 you mentioned in this order: Ranger, Warrior, Thief. IJ0L.
